Perfect for unexpected guests, these three easy recipes are simple to make and best of all—only use two ingredients. Indulge in some chocolate or peanut butter fudge among friends or get the kids involved in making some colourful chocolate bark over this long weekend with these quick and easy recipes from food photographer Catherine Frawley.
EASY 2 INGREDIENT TREATS
It is completely possible to make sweet, creamy, luxurious looking treats in 10 mins and with just two ingredients. Yes you do need the chilling time to set the fudge and bark but you could easily whip these up the night before. They also keep in the fridge for 4-5 days if you can make them last that long.
2 INGREDIENT CHOCOLATE FUDGE
Prep & Cook Time – 10 mins
Overnight in the fridge to set
Makes 24 squares
Ingredients
400g Chocolate Broken into pieces
397g Condensed Milk
Sprinkles or mini marshmallows
Method
In a large glass bowl, mix together the chocolate pieces and the condensed milk. Place in a microwave for 30 seconds, beat the chocolate and milk and repeat using the microwave to melt the chocolate in 30 second intervals. Better to melt any last lumps of chocolate by mixing with a wooden spoon than over microwaving and burning the chocolate.
Line a small baking tray with parchment. Pour the mix into the tray, bang the tray a few times, to even out the mix. If you are adding any decorations do this now. Cover with cling film and place in the fridge overnight.
Once set, you can cut into squares. Keep in the fridge until ready to serve
2 INGREDIENT CHOCOLATE BARK
Prep & Cook Time – 10 mins
At least 2 hours in the fridge to set
Ingredients
150g Chocolate Broken into pieces (your choice of dark, milk or white)
Handful of mixed raisins and berries
Method
In a small bowl, add the broken chocolate, melt in the microwave in 30 second intervals until completely smooth.
Line a baking sheet with parchment. Pour the melted chocolate over the parchment and spread out into a thin layer. Sprinkle over the raisins and berries. Cover with cling film and leave in the fridge for at least 2 hours or overnight, until set.
Cut the chocolate into shards place on platter to serve.
2 INGREDIENT PEANUT FUDGE
Prep & Cook Time – 10 mins
Overnight in the fridge to set
Makes 24 squares
Ingredients
250g Peanut Butter
397g Condensed Milk
Method
In a large glass bowl, add the peanut butter and condensed milk. Place in the microwave for 30 seconds beat the ingredients together. You may need to give it another 30 seconds to help the ingredients combine.
Line a small baking tray with parchment. Pour the mix into the tray, bang the tray a few times, to even out the mix. Cover with cling film and place in the fridge overnight. Depending on the quality of the peanut butter you used, you may need to pop the tray into the freezer for an hour before cutting into squares.
Keep in the fridge until ready to serve
