Lemon And Lavender Shortbread Biscuits
Recently I have become obsessed with adding the unusual ingredient of lavender in my baking, simply because it has been growing in abundance around my parents home in Kent, where I have been spending the Summer. My favourite treat to create with this scented flower has been these Lemon and Lavender Shortbread Biscuits.
Ingredients
– 150g Plain Flour
– 100g Cold Unsalted Butter
– 50g Golden Caster Sugar
– 1tbsp Fresh or Dried Lavender Heads
– 3 tbsp Icing Sugar
– 1-3 tsp Freshly Squeezed Lemon Juice
Recipe
1. Mix the flour and sugar together in a large bowl, then add the butter cut into small pieces. Rub the sugar and flour mixture with the butter together, until it starts to form a dough.
2. Add the lavender heads and knead the dough together into a ball. Wrap the ball in cling film and refrigerate for at least half an hour. Pre-heat the oven to 200 degrees.
3. On a lightly floured surface roll out the dough to usual biscuit thickness and cut into rounds using a cookie cutter. Lay these out on a lightly greased baking tray and refrigerate for about 10 minutes on the tray.
4. Bake for 10-12 minutes until they are just starting to turn, but are not yet golden. Remove from the oven and allow to rest on the hot baking trays for about two minutes. Remove to cool on a wire rack.
5. Meanwhile, make the icing. Mix the lemon juice into the icing little by little, until the icing is smooth but stiff, so that it bunches around the spoon you are mixing it with. Any runnier and it won’t decorate or set on top of your biscuits. Spoon into a disposable piping bag and snip only a tiny bit off the bottom. Draw thin lines of the icing over all the biscuits and allow to set – Enjoy!’
